How to use it, and why it matters

How to use

Use your real food cost

Food cost is the ingredient cost of that dish divided by its dine-in price. Most LA restaurants land between 28% and 38%. Packaging is the box, bag, cutlery and sauce cups for one order, usually $0.80–$2.50.

Why it matters

Same price on delivery means half the profit

At 30% commission and 32% food cost, an $18 plate that nets $12.24 in the dining room nets about $5 on the app. A separate delivery menu, priced 15–25% higher, is normal and the platforms allow it. How we grow delivery sales.

Two targets

Match the dollars, then look at the percentage

“Profit-matched” is the delivery price that leaves you the same dollars per order as dine-in; that is the one most owners want. The readout also shows what it would take to keep the same profit percentage, which at 30% commission is usually unrealistic, and says so.
